another frugal dessert

Rice Pudding...... don't blink it will disappear 
2 eggs                            2 cups hot cooked rice
1/2 cup sugar                   2 cups milk
1/2 teaspoon vanilla          cinnamon
optional 1/2 cup raisins

in a 1 to 2 quart casserole dish beat the eggs add sugar,milk, (raisins if wanted), vanilla and rice.  stir in cinnamon. 
bake at 325 for 50 to 60 minutes.  stir it occasionally.  it will firm up and can be served warm or cold.
